Welcome back to Roots And Arrows Homestead! I am so excited to share with you this Blueberry Muffin Cookie recipe!
Actually, I stumbled upon this recipe kind of by accident! My original mission was to whip up some muffin tops, but they didn’t quite turn out as thick as my muffin tops usually do. That being said, there wasn’t one of these cookies leftover at the end of the day! All four of my kiddos loved them and I devoured a couple with my morning coffee. My husband even had one and went for another, he’s not a big fan of blueberries at all, so that says a lot!
In our house, these have now been deemed the Blueberry Muffin Cookies, so there you go!
This is a very simple recipe and I mixed it all together in one large mixing bowl and it hardly took 5 minutes to get all the ingredients together.

They had a perfect little crunch around the edge like a good cookie. And the inside was just as soft and fluffy as you’d want a muffin texture to be. They weren’t too thick or too thin.
It’s like they’re just right.
I will be making this recipe again and this time, on purpose!
